Southwest Tex Mex Salad
Pack some corn chips with this one!
Ingredients
chopped romaine lettuce
cherry tomatoes, halved
chopped red onion
corn kernels, drained if cooked from frozen or cut off the cob in season
canned black beans or chickpeas, drained and rinsed
2 tablespoons chopped fresh cilantro leaves
avocado, diced
Cilantro lime dressing
1/2 cup loosely packed cilantro, stems removed
(if you don't like cilantro, sub in some parsley)
1/2 cup plain Greek or soy yogurt
2 cloves garlic
Juice of 1/2 lime
Pinch of salt
4 tbsp olive oil
1 tablespoons apple cider vinegar
